Chickpea and Orange Salad - A Family Favorite!

- 1 can (15oz) chickpeas, drained and rinsed

- 2 oranges, peeled and sliced

- 1 cucumber, diced

- 1/4 red onion, thinly sliced

- 2 tbsp fresh parsley, chopped

- 2 tbsp fresh mint, chopped

- Juice of 1 lemon

- 1 tbsp olive oil

- Salt and pepper to taste

Growing up, this refreshing Mediterranean-inspired dish was a staple in our household. My mom would whip it up in just 15 minutes flat, and we'd all gather around the table to enjoy its bright, zesty flavors together as a family.


Packed with protein-rich chickpeas, juicy orange slices, crunchy cucumber, and aromatic herbs, it's a flavor explosion in every bite. Best of all, it's so quick and simple to prepare - perfect for busy weeknights or weekend lunches.


Ingredients:

- 1 can (15oz) chickpeas, drained and rinsed

- 2 oranges, peeled and sliced

- 1 cucumber, diced

- 1/4 red onion, thinly sliced

- 2 tbsp fresh parsley, chopped

- 2 tbsp fresh mint, chopped

- Juice of 1 lemon

- 1 tbsp olive oil

- Salt and pepper to taste


Instructions:

1. In a large bowl, combine the chickpeas, orange slices, cucumber, onion, parsley, and mint.

2. Drizzle with lemon juice and olive oil, then season with salt and pepper.

3. Gently toss to coat everything evenly.

4. Chill for 10 minutes to allow the flavors to meld.

5. Serve chilled or at room temperature. Enjoy! 😋
